Collection: Lemon poppyseed protein muffin

1 1/3 c flour of your choice
2 scoops Elevate vanilla protein powder
1/2 tsp baking soda
1/2 tsp salt
Juice of one large lemon
Zest of two large lemons
1/4 c almond milk
3/4 c palm sugar
1 tbsp poppyseeds
3/4 c plain non fat Greek yogurt
1/4 c coconut oil

  • Heat oven to 450
  • In one bowl mix the flour, baking soda, salt and protein powder.
  • In second bowl combine Greek yogurt, sugar, egg, almond milk, vanilla, coconut oil, poppy seeds, lemon juice and zest of one lemon.
  • Combine wet and dry mix.
  • Bake for about 15-20 minutes or until golden on top.
  • Sprinkle zest of other lemon on top.
